Ingredients
- 20 baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 sprigs fresh thyme (optional)
- Preheat oven to 450°F.
- In a large pot of boiling water, cook potatoes until tender and can be pierced with a fork, about 15 minutes.
- Once potatoes are done cooking, strain well and place them on a baking sheet.
- Using the back of a fork or a potato masher, carefully ‘smash’ the potatoes until flattened.
- Top each potato with a drizzle of olive oil, sea salt and thyme.
- Place in the oven and bake for 15-20 minutes, or until golden brown and crisp.
- Serve warm and enjoy!
