Ingredients
- 3/4 cup cottage cheese
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1 teaspoon olive oil
- 2 tablespoons chopped fresh herbs, such as dill, parsley, or chives
- 1/4 teaspoon everything bagel seasoning
- 1 egg (optional)
- Bring a small pot of water to a boil then, using a spoon, gently add your egg to the pot and boil for 7 minutes. Once cooked, remove the egg from the pot and transfer it to a bowl with ice cold water until cool enough to handle, then peel the egg and slice it in half.
- In a small bowl, add the cottage cheese, then top with cherry tomatoes, diced cucumber, and soft-boiled egg.
- Drizzle with olive oil, sprinkle with fresh herbs and everything bagel seasoning, and season with salt and pepper to taste.
