Instructions

  1. Preheat oven to 375°F and grease a 9 x 9 baking dish with butter.
  2. In a medium mixing bowl, add all the wet ingredients; egg, maple syrup, vanilla extract, milk, and melted butter, and whisk to combine. Set aside.
  3. In a large bowl, combine all the dry ingredients; rolled oats, pecans, cinnamon, nutmeg, cloves, baking powder, and salt.
  4. Pour the wet ingredients into to bowl of dry ingredients and stir until well combined. Add diced apples to the mixture and gently fold in until well incorporated.
  5. Transfer the oat mixture to the prepared baking dish, spreading it out evenly in the dish. (Optional: You can top the mixture with additional apple slices at this point, as per photos, if desired.)
  6. Transfer the baking dish to the oven for 35-40 minutes until the middle is set and the top is golden brown.
  7. Once baked, remove the oatmeal from the oven and allow to cool for 5-10 minutes to set. Then slice and serve with toppings of your choice.
  8. Leftovers can be stored in an airtight container in the fridge for up to 5 days or in the freezer for 3 months.
