Ingredients
Salad Ingredients:
- 6 cups arugula, well packed
- 2 cups watermelon, diced into 1/2″ cubes
- 1/2 cup crumbled feta
- 1/2 cup mint leaves, thinly sliced
Dressing Ingredients:
- 1/4 cup olive oil
- 1 shallot, minced
- 2 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
- Assemble the salad; in a large bowl combine arugula, watermelon, feta, and mint.
- In a small bowl or jar prepare the dressing. Combine all ingredients and whisk together until well combined.
- When you are ready to serve, drizzle salad with dressing and toss to combine.
- Season with salt and pepper to taste (as needed) and serve immediately.
