Ingredients
- 250 grams halloumi
- 1/4 cup couscous, dry
- 3 tomatoes, sliced into wedges
- 1/2 English cucumber, halved lengthwise and sliced
- 1/4 cup parsley, roughly chopped
- 3 tablespoons olive oil
- 1/2 lemon, juiced
- 1/4 teaspoon salt
- 1 pinch black pepper
- Cook the couscous as per the package directions.
- Heat a grill or grill pan to medium-high heat.
- Slice halloumi into 1/4-inch or 1/2-inch pieces, add to the grill and cook for 3-4 minutes per side until crispy and golden brown. Once cooked set aside. (This can be done in batches if needed.)
- In a large bowl, combine cooked couscous, sliced tomatoes, sliced cucumber and parsley. Cover with olive oil, lemon juice, salt and pepper and toss to combine. Taste and adjust seasoning as needed.
- Top with warm grilled halloumi and serve immediately.
- Any leftovers can be stored in the fridge for up to 2 days.
