Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1/2 pound ground pork
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 1 1/2 teaspoons smoked paprika (optional)
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (14 ounce) can diced tomatoes
- 1 (14 ounce) can crushed tomatoes
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 cup water
- 5 cups shredded green cabbage
- 1/2 cup short-grain white rice, uncooked
- Fresh dill, to serve
- Sour cream, to serve
Instructions
- In a large pot on medium-high heat, warm the olive oil, then add ground beef and ground pork and cook, breaking it up with a spatula or wooden spoon, for 4-5 minutes until mostly cooked through.
- Add the diced onion and carrots and cook for an additional 2-3 minutes until vegetables are slightly tender.
- Add the minced garlic, paprika, salt, and pepper, and cook for an additional minute until fragrant.
- Pour in the diced tomatoes, crushed tomatoes, tomato paste, beef broth, and water, scraping up any tasty bits from the bottom of the pot, and stir to combine.
- Add the chopped cabbage and uncooked rice to the pot, stir again to combine, and bring to a gentle boil, then reduce to a simmer and cook for 20-25 minutes until the rice is cooked through.
- Once cooked, taste and adjust seasoning with additional salt and pepper as needed.
- The soup can be served immediately or cooled and stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months.
Notes
To Use Onion Powder: Swap the onion for 1 teaspoon of onion powder in step #2.
To Use Garlic Powder: Swap the garlic cloves for 2 teaspoons of garlic powder in step #3.
