Ingredients
- 1 cup almonds
- 1 cup dried dates
- 1 cup dried cherries
- 2 tablespoons cocoa powder
- 1/2 cup dark chocolate chip
- 1/2 teaspoon vanilla extract
- 1 pinch sea salt
Instructions
- Place almonds in a food processor and blend until roughly ground.
- Add dates, cherries, cocoa powder, vanilla extract and sea salt and blend until mixture is well combined and becomes sticky.
- Add chocolate chips and blend for another 30 seconds, just long enough to mix them in.
- Seperate mixture into 1 tablespoon portions and roll into balls until all of the dough has been used.
- The energy bites can be eaten immediately or stored in the fridge for up to one week or the freezer for a month.
