To me, it is worth the extra time and investment to ensure that I am consuming something that is more nutritious and has a smaller environmental footprint. This pistachio crusted salmon recipe calls for Dijon mustard and honey, however, grainy mustard and maple syrup would work just as well.
- 4 x 4oz salmon fillets
- 1 lemon, juiced
- 2 tablespoon Dijon mustard
- 2 tablespoon honey
- 1/2 cup shelled pistachios, roughly chopped
- 1/2 teaspoon sea salt
- Preheat the oven to 400° F.
- In a small bowl, whisk together lemon juice, Dijon mustard and honey.
- Using a large knife or a food processor, roughly chop the pistachios into a coarse meal.
- Place salmon fillets on a baking sheet and season with sea salt.
- Spoon marinade evenly over each salmon fillet and top with crushed pistachios.
