The bulk of salmon sold in the grocery store is either farmed, or was caught and shipped to China for processing before hitting your grocery store shelves. To me, it is worth the extra time and investment to ensure that I am consuming something that is more nutritious and has a smaller environmental footprint. Pistachio Crusted Salmon
This pistachio crusted salmon recipe calls for Dijon mustard and honey, however, grainy mustard and maple syrup would work just as well.

- 4 x 4oz salmon fillets
- 1 lemon, juiced
- 2 tablespoon Dijon mustard
- 2 tablespoon honey
- 1/2 cup shelled pistachios, roughly chopped
- 1/2 teaspoon sea salt
- Preheat the oven to 400° F.
- In a small bowl, whisk together lemon juice, Dijon mustard and honey.
- Using a large knife or a food processor, roughly chop the pistachios into a coarse meal.
- Place salmon fillets on a baking sheet and season with sea salt.
- Spoon marinade evenly over each salmon fillet and top with crushed pistachios.
- Transfer to the oven and bake for 15 or until flaky and cooked through.
- Serve warm and enjoy!
