Ingredients
- 4 russet potatoes, diced
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 400°F.
- Add diced potatoes to a large baking sheet, drizzle with olive oil, and season with salt and pepper.
- Using your hands, toss the potatoes in the oil until they are evenly coated, and then spread them out across the baking sheet.
- Transfer baking sheet to the oven and roast for 50-60 minutes until crispy and golden.
