Ingredients
Salad:
- 2 (14 ounce) cans cannellini beans, drained and rinsed
- 2 stalks celery, diced
- 1/2 red onion, diced
- 1/2 cup fresh herbs, such as fresh parsley, dill, and/or basil
- 1/2 cup feta cheese, crumbled
Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced or grated
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a small bowl or jar, add the dressing ingredients: olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper, and whisk until well combined. Set aside.
- In a large bowl, add the drained and rinsed white beans, chopped celery, chopped red onion, chopped herbs, and crumbled feta cheese. Toss to combine.
- Pour the dressing over the salad and toss again until well combined. Taste and adjust seasoning with additional salt and pepper as needed.
