What are Sheet Pan Dinners?
Similar in concept to one-pot meals, sheet pan dinners are complete meals made on a single sheet pan. By combining protein, vegetables, fat and flavouring on a sheet pan and cooking everything together in the oven, you can easily create a healthy and balanced meal with tons of flavour and minimal effort. Not only are they inexpensive, versatile and easy to make, but sheet pan dinners save time by cutting down on cooking and clean-up.
How to Make a Sheet Pan Dinner
Making a healthy sheet pan dinner is actually a lot simpler than you might think. As long as you have a rimmed sheet pan and an oven, you can easily create a wide variety of sheet pan dinners. For the best results, be sure to choose ingredients that have a similar cooking time in order to ensure that nothing is overcooked or undercooked.
Generally speaking, bone-in meats will take longer to cook and are therefore best paired with potatoes and root vegetables, while seafood and lighter meats are best paired with vegetables that require shorter cooking times, however, not everything needs to go into the oven at the same time. Just because two things have different cooking rates doesn’t mean you can’t combine them, it simply means you might have to add them at different stages of the cooking process.
When it comes to cooking oil, olive oil is the best bet as it has a mild and versatile flavour and can withstand the heat of the oven. Coating all of the ingredients in oil, specifically the vegetables, will also help to ensure the ingredients don’t stick to the sheet pan.
And, finally, don’t skimp on the seasoning. Meat and vegetables are all delicious, but on their own they can be bland and boring, so be sure season everything generously with salt and pepper and pick a spice, herb or both to help showcase the dish and add some much-needed flavour.

Looking for Vegetarian Sheet Pan Dinners?
All of these recipes can easily be made vegetarian by swapping the protein for tofu, chickpeas or omitting it completely. If you want to use tofu, be sure to press it well to remove all of the excess water before slicing it into squares or triangles, and if you want to use chickpeas, use canned chickpeas or pre-cook dried chickpeas. The cooking time will need to be changed in both cases, tofu and chickpeas can be cooked for 20-30 minutes until crispy at 400°F, and can be added during the cooking process if needed.
